• 1 pound beef sirloin, thinly sliced
• 2 tablespoons soy sauce
• 2 tablespoons brown sugar
• 1 tablespoon lime juice
• 2 cloves garlic, minced
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1/2 teaspoon ground turmeric
• 1/4 cup creamy peanut butter
• 1/4 cup coconut milk
• 2 tablespoons lime juice
• 1 tablespoon soy sauce
• 1 teaspoon brown sugar
• 1/2 teaspoon chili powder
• 1/4 teaspoon ground ginger
• Salt and pepper to taste
Instructions
• Step 1: In a large resealable bag or bowl, combine the sliced beef, soy sauce, brown sugar, lime juice, garlic, coriander, cumin, and turmeric. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
• Step 2: While the beef is marinating, prepare the peanut sauce by whisking together the peanut butter, coconut milk, lime juice, soy sauce, brown sugar, chili powder, and ground ginger in a small saucepan. Cook over medium heat, stirring frequently, until the sauce is smooth and heated through, about 5 minutes. Season with salt and pepper to taste.
• Step 3: Preheat your grill or grill pan to medium-high heat. Thread the marinated beef onto skewers, leaving a small space between each piece.
• Step 4: Grill the satay beef skewers for 2-3 minutes per side, or until the beef is charred and cooked through. Serve the grilled satay beef immediately, accompanied by the warm peanut sauce for dipping.
