Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking pan with butter or non-stick cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Then, stir in the sour cream and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- In a separate bowl, make the streusel topping by combining the flour, brown sugar, and cinnamon. Cut in the cubed butter until the mixture resembles coarse crumbs.
- Spread the coffee cake batter evenly into the prepared baking pan. Sprinkle the streusel topping over the top, making sure to cover the entire surface.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the coffee cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
